Animal foods are often are made from processed and cooked foods, and the enzymes that existed in the original fresh foods have been diminished or deactivated. This has led some researchers and health professionals to link this loss with current health crises.

The four types of enzymes that break down food molecules include lipase for fat molecules, protease for protein, cellulase for cellulose, and amylase for starch molecules.
